Happy National Chip and Dip Day

Can you believe how awesome this is? There is an official day for us to pull out our chip and dip bowls and chow down! So for those of you who are lounging on the couch with a bowl of your favorite chips and dip, today is for you!

It is National Chip and Dip today!

Here are two of my favorite chip and dip recipes to help you celebrate this awesome day!

Both are healthy!

Momma’s Mango Salsa

3 ripe mangoes, peeled, chopped into small pieces

4 plum tomatoes seeded and diced

1 red onion diced

½ cup of fresh cilantro chopped

¼ cup of fresh basil chopped

1 jalapeno pepper ribbed and finely chopped

1 Serrano pepper ribbed, seeded, and finely chopped

2 cloves of garlic finely shaved

1 large orange

1 lime

1 lemon

Combine the mangoes, tomatoes, red onions, cilantro, basil, jalapeno pepper, Serrano peppers, and garlic in a large bowl. Cut the orange, lime, and lemon in half. Squeeze ½ of each in a bowl. Remove any seeds. Pour the mixture over the mango salsa. Season to taste with fresh ground pepper and rock salt. Cover with plastic wrap and place in the refrigerator for about 15 to 20 minutes to chill. Serve with blue and red chips.  This is also an incredible salsa to use with fish or chicken dishes.  Omit the peppers when serving to children.

Cucumbers and tomato

Avocado Explosion

5 to 6 ripe Avocadoes (peeled and diced)

1 lemon (halved and squeezed)

1 orange (halved and squeezed)

1 small bag of rocket (washed and paper towel dried)

2 jalapeno peppers (seeded and finely chopped)

1 tablespoon of tabasico sauce

6 roma tomatoes (seeded and diced)

2 small red onions (peeled and diced)

1 can of sliced black olives (drained and paper towel dried)

Combine avocadoes, jalapeno peppers, roma tomatoes, and black olives in a bowl. Gently stir to mix together. Add tabasico sauce to the mix and half of lemon juice to the mixture. Gently stir. Add red onions and stir. Place in the fridge for 10 to 15 minutes. Season to taste with fresh ground pepper and rock salt. Just before serving gently toss rocket into the mixture, add lemon juice and orange juice to mixture and serve with chips.

  2. I ABSOLUTELY LOVE YOUR BLOG! DOn’t get me started on this post! You had me at chips and dips! Dipping is one of my all time favorite activities! I seem to want to dip everything from to sandwiches and even burgers! Thanks for sharing this VERY special day! I will have to mark this on my calendar! :)
